It looks like the large bucket we were using had a small hole in it somewhere because we weren't getting any CO2 build up in the air lock, so we've now poured it into demijohns (including two 3 litre home made ones which I'll post pics of later!).
Thankfully it doesn't seem to have turned to vinegar and they are all producing plenty of CO2 now.
